RECIPES - TRADITIONAL BREAD SAUCE

Bread SauceBread sauce is a traditional sauce used at Christmas to accompany Christmas Dinner. Delicious accompaniment to turkey & ham.

110g Mr Crumb Breadcrumbs
1 Large Onion Peeled
15-18 Whole Cloves
1 Bay Leaf
8 Black Peppercorns
570ml Milk
2 Tablespoons Cream
Salt & Pepper


Method

  1. Cut the onion in half and stick the cloves in it.

  2. Place the onion - studded with cloves, bay leaf and the peppercorns in a saucepan together with the milk.

  3. Add some salt then bring everything up to boiling point.

  4. Take off the heat, cover the pan and leave in a warm place for the milk to infuse for at least two hours.

  5. When you're ready to make the sauce, remove the onion, bay leaf and peppercorns and keep them to one side.

  6. Stir the breadcrumbs and butter into the milk.

  7. Leave the saucepan on a very low heat, stirring occasionally, until the crumbs have swollen and thickened the sauce, approx 10 minutes.

  8. Stir in the cream and add seasoning.

  9. Add back in the clove-studded onion. Cover the surface with clingfilm to prevent a skin from forming.

  10. When the sauce is cold, remove and discard the onion. Reheat prior to serving.
